Raw and grassy, dense as gravel. Every batch starts as farm-direct green coffee — this one from 1,900 metres up.

The roast, in four stages

Yellowing — 150°C

Sugars wake up. The room smells like baking bread.

First crack — 196°C

The bean splits and speaks. From here, seconds matter.

Drop — 212°C

Out of the drum and into the cooling tray. Twelve minutes, start to finish.

Three coffees. No filler.
